As we prepare to close out the first decade of a new century, it is more apparent than ever that each and every one of us must take a firmer stance towards environmentally conscientious living. As each of us looks for ways to do our part to lessen our negative impact on the planet and to promote "greener" practices, it is crucial to look beyond the obvious for new ways to make positive change in the way that we live and do business. One often overlooked source of waste in the food service industry lies in the misuse of cooking oil and mismanagement of fryers in commercial kitchens.

FiltaFry, an international eco-friendly oil management services company specializing in cooking oil filtration and recycling, understands the importance improving our impact on the planet through better usage of resources and by reducing waste. Filta Environmental Kitchen Solutions offers the means to help restaurant owners minimize waste and optimize the use of kitchen fryers. Not only can FiltaFry help a business do its part to save the planet, it gives them an opportunity to save some money along the way.

"The price of cooking oil, as a commodity, has sky-rocketed in the last year and the need for efficient operations has never been greater," states Filta Group CEO, Victor Clewes, "Filtering and re-using cooking oil reduces oil purchases. Reduced oil purchases result in cost and waste savings. Then, when the oil can no longer be used for cooking, it becomes bio-fuel. Nothing is wasted. Its used in the food we eat, then in the cars we drive. It becomes a net positive for the environment as well as a restaurants bottom line."

Several months ago T-Rex BBQ, a moderately sized barbecue establishment out of Berkeley, CA, took on the initiative to begin recycling its cooking oil. Prior to the decision to go green, the restaurant was using inexpensive canola oil. "The price was so low, recycling didnt matter," Chef de Cuisine Miles Kline says. At the bequest of the filtering company, Kline switch from canola oil to more expensive peanut oil, and was shocked to discover that the business actually began to save money. "We pay $90, $95 a week and started saving instantly," says Kline. This owes to the fact that the micro-filtering system enables the operation to extend the use of oil, thereby using 40% less oil over time. Afterwards, the restaurants oil is removed to be recycled into eco-friendly fuel. Kline claims that the choice to begin recycling cooking oil was "both economical and environmental".

As the costs of food and fuel prices continue to escalate, consumers are no longer the only ones to see the economic as well as the environmental value in the "green" movement. The commercial sector has been quick to pick up the growing trend. When questioned regarding this upswing in the trend toward more ecologically sound practices in restaurants, Victor Clewes replied, "Smart business people are turning on to the idea that going green is not an exclusive domain for tree huggers!"

FiltaFry Environmental Kitchen Solutions offers food service entities a unique opportunity to not only decrease waste, but to save money while doing so. FiltaFry can help a restaurant diminish its cooking oil usage by almost half while simultaneously reducing wasteful energy usage. FiltaFry means more than saving the environment, it means saving time and money.
